Full Job Description

We are looking for an experienced and passionate Sous Chef to join our team in a busy hotel kitchen. As Sous Chef you will be working with our established kitchen team to ensure the best service possible is delivered to our guests daily. The Sous Chef will assist the Head Chef in managing the kitchen and ensuring that all food preparation and cooking meets the highest standards. As part of your role, you will:

  • Assist in managing the kitchen and ensuring that all food preparation and cooking meets the highest standards
  • Supervise and train junior chefs and kitchen staff
  • Plan and develop menus in collaboration with the Head Chef
  • Ensure that all food items are properly stored, labeled, and rotated
  • Monitor inventory levels and order supplies as needed
  • Maintain a clean and organised kitchen, including all equipment, utensils, and workstations
  • Adhere to all food safety and sanitation standards
  • Assist in the preparation and presentation of special events and banquets
  • Perform other duties as assigned by the Head Chef and senior hotel management.
  • Based in the Mercure Perth Hotel, Scotland you will be part of a team of passionate people who know that being the best doesn't always mean working around the clock. Formerly a 15th century water-mill, the hotel is right in the centre of Perth, The hotel has 3 conference rooms for up to 120 delegates, along with restaurant and bar.

    To be successful in this role, you will be passionate about providing an exceptional guest experience and living through our brand standards. Experience working within a branded or hotel kitchen environment at supervisory level is essential along with:

  • Excellent communication and interpersonal skills
  • Ability to work in a fast-paced environment and handle multiple tasks simultaneously

  • Understanding of food safety and sanitation guidelines
  • Ability to work flexible hours, including weekends and holidays
